Özet

'Hamsikusu' is a popular anchovy dish of the Eastern Black Sea region of Turkey. In this study, the shelf-life of this product in frozen storage at -18 +/-1 degreesC was investigated, Four types of the product were packed and frozen at -35 degreesC and stored at -18 +/-1 degreesC. The total bacteria counts, chemical analyses and sensory analysis of the samples were carried out before and at monthly intervals after freezing in order to test the shelf-life and quality,
