Ethyl acetate extracts of Arbutus unedo L. fruits are concentrated to a small volume and subjected to gas chromatography-mass spectrometry (GC MS) to analyze the chemical constituents. Thirty one components are identified as mainly phenol derivatives, saturated and unsaturated carbonyl and dicarbonyl compounds, polyhydroxy compounds, cyclic and bicyclic compounds and terpenoid compounds by mass spectra of the intact molecules as trimethylsilyl derivatives. Some of these compounds are 3-fluoro-beta ,4-dihydroxy-5-methoxybenzene ethanamine, butanedioic acid, 2-methyl-1,3-dihydroxybutane, 2-butanedioic acid, 2,3-dimethyl-4-hydroxybutyrate, lactic acid, butanedioic acid, 4-hydroxyphenylethanol, pentanedioic acid, 4-hydroxybenzoic acid, 4-hydroxybenzeneacetic acid, 3-hydroxy-4-methoxybenzoic acid, octanedioic acid, levoglucosan, azelaic acid, 3,4-dihydroxybenzoic acid, D-fructose, ribitol, 3,4,5-trihydroxybenzoic acid, beta -D-glucopyranose, hexadecanoic acid, octadecanoic acid, 17-octadecenoic acid, sebaic acid and methanone.
